Most fire protection companies are run by salespeople and corporate technicians. Falls Fire Protection is run by a guy who's spent 20 years actually operating food businesses — and got tired of overpaying for fire service that never quite understood what we needed.
From the booth to the inspection truck.
Borjan "Boki" Jaksic has been in the food service business for nearly 20 years. He owns Boki Food Service — 12 food concepts that operate across 5 state fairs in 9 states, plus 30+ festivals every season. Boki Gelato, Boki European Street Food, and Mobile Food Experts are all part of the operation.
Year after year, watching the cost of fire compliance climb, Borjan kept asking the same question: why is this so expensive, and why do these guys never understand my business? National chains were charging triple what the work was worth. Local shops drove an hour from Mitchell. Nobody specialized in food trucks. Nobody asked the questions that matter when your kitchen is on wheels and your fryer is bolted to a trailer floor.
So Borjan is pursuing ICC/NAFED certification. Studied NFPA 10, NFPA 17A, and NFPA 96. Built Falls Fire Protection to be the shop he wished existed when he was the customer — built specifically to serve extinguisher inspections, hood suppression, and food truck system installs across Sioux Falls and the surrounding metro.
